Frozen Surprise S’Mores
from "Holly Clegg Trim & Terrific Freezer Friendly Meals"

These treats look like typical S'Mores, but have a surprise chocolate-peanut butter filling for the chocolate candy and a dollop of whipped topping for the marshmallow.

Makes about 29
  • 1 (4 serving) package instant chocolate pudding and pie filling
  • 1 1/2 cups skim milk
  • 1/2 cup peanut butter
  • 1 pound box graham crackers
  • 1 (8-ounce) container frozen fat free whipped topping, thawed
In a bowl, whisk together the pudding, milk, and peanut butter. Divide graham crackers in half (2 pieces together) and lay on baking sheet. Spread pudding mixture on half of the graham crackers, and top with whipped topping. Cover with other half of graham cracker, pressing down gently to form a sandwich. Freeze on baking sheet.
  • To Prepare and Eat Now: Eat as desired when frozen.
  • To Freeze: Transfer frozen S'Mores to freezer zip-top bags, label and freeze. Recommended freezing time: up to 2 to 3 months
  • To Prepare After Freezing: Serve directly from the freezer.
