Seasonal Fresh Fruit Agua Fresca
Ingredients:
- 1/2 cup Seasonal Fresh Fruit
- 1/4 cup Sugar
- 1 1/2 cups Water
Instructions:
Puree the fresh fruit
Strain the puree with a fine strainer to extract all of the juice (you may need to add a little water)
Combine the sugar, strained fruit puree and water to taste
Modern Mexican Guacamole
Portion for 4
4 avocados
1/4 white onion, diced
1/2 cup chopped cilantro
1 tomato, chopped
1 Serrano pepper, diced fine
lime juice to taste
salt to taste
Halve the avocados and remove the pits. Scoop the meat into a bowl. Add remaining ingredients and mix well. Taste and adjust the seasoning with salt and lemon juice.
