Pasta and Eggs alla Nonna
from Laudicio
Serves 4
Ingredients:
- 1/4 cup extra virgin olive oil
- 8 eggs
- 4 cloves garlic, sliced
- 1 lb. spaghettini
- 4 sprigs flat leaf parsley, chopped
- 1/2 stick butter
- 3/4 cup freshly grated parmigiano
- black pepper
- red pepper flakes
Put pasta in large pot of boiling salted water
Start sauce while cooking pasta.
Over medium flame in non-reactive sautÈ pan add olive oil and butter, add garlic (do not brown),
slide the eggs in (do not break yolk), turn flame to high
salt, pepper, parsley taste
The object is to cook the eggs so the white is crisp and the yolk still soft
Drain pasta when al dente, add to eggs, finish with extra virgin olive oil and the parmigiano cheese.
Grandma Laudisio use to make this for breakfast when the weather turned cold.
