Meaty Biscuit Cups
from "Holly Clegg Trim & Terrific Freezer Friendly Meals"

Simple ingredients of ground meat, barbecue sauce and corn make these wonderful meaty cups. Also great for a light lunch.
  • 1 pound ground sirloin
  • 1/3 cup finely chopped red onion
  • 1/3 cup barbecue sauce
  • 1/2 cup frozen corn, thawed
  • 1 (10-ounce) can flaky biscuits
  • 1/2 cup shredded reduced fat sharp Cheddar cheese
Preheat the oven to 400 degrees. In a non-stick skillet, cook the ground sirloin and red onion over medium heat, about 5 minutes or until meat is done. Drain any excess grease. Add the barbecue sauce, mixing well. Divide each biscuit into half and press into non-stick muffin tins coated with nonstick cooking spray. Divide the meat into the muffin tins and bake for 10 minutes. Remove from oven and sprinkle with cheese. Return to the oven for one minute or until cheese melts. Serve

Makes 20 meaty biscuit cups.
  • To Prepare and Eat Now: Preheat oven to 400°F. After baking 10 minutes, remove from the oven and sprinkle with cheese. Return to the oven for one minute or until cheese melts.
  • To Freeze: Cool baked cups to room temperature. Do not sprinkle with the cheese. Freeze on a baking sheet, then transfer to zip top freezer bags. Recommended freezing time: up to 2 months
  • To Prepare After Freezing: Preheat the oven to 350°F. Defrost cups or place them frozen on a non-stick baking sheet. Bake for 10 to 15 minutes or until heated through, sprinkle with cheese and return to the oven for one minute or until cheese melts.
